When we hear the word "noodles" or "instant noodles", the first thing that comes in our mind is MAGGI. A quick instant noodle from nestle, fast to cook (takes 3 to 4 minutes minimum), quick to eat and an ever favorite of everyone, be it a (three) 3 years old or (ninety) 90 years old.
On the other hand Anda Ghotala or as translated in english Egg mix curry, is a very popular street food of Mumbai, a metro city in India. Anda Ghotala is typically made using pav bhaji masala (special mix of masala) in a mixture of mashed veggies, topped with an egg poach a.k.a sunny side up.
During lockdown, when I was experimenting with my hobby (cooking food), I came up with a new cocktail of this two different recipes together. Let me share with all of you my new cocktail recipe which I call Maggi Anda Ghotala. Let us Begin.....
Steps & Ingredients:
First let us boil the maggi
- For this, take 1 packet maggi (70g packet)
- Crush it as much as possible
- Heat 1/2 cup of water (125ml)
- Put the crushed maggi in it (Do not add the taste maker)
- Boil it for 1 to 2 minutes only
- Do not over boil the maggi else it will become soggy
- Stain it with tap water, then cold water and ice (this will help the noddles not to stick with each other)
- Put little ghee (clarified butter) or butter and spread it as much as possible on a big plate
- Let it rest and dry
Now let us make Anda Ghotala
- For this you would need to heat up a pan
- Add 50 grams butter
- Add 2 tbsp refine or sunflower oil
When the butter melts and mixes with the oil.
- Add 2 tsp rai (mustard seeds)
Once mustard seeds starts popping and crackling.
- Add 2 finely chopped onions
- Add 1 tbsp ginger garlic chilly paste (use ready made or make it in home)
Cook until onion turns translucent.
- Add 3 tsp pav bhaji masala
- Add 1 tsp garam masala
- Add 1 tsp jeera powder (cumin powder)
- Add 1 tsp kashmiri red chilly powder
- Add 1 tsp chicken masala
- Add 1 packet maggi taste maker
- Add 2 to 4 finely chopped tomatoes
- Add salt to taste
- Add 2 drops of red food color (optional)
Cook until tomatoes becomes very soft.
- Add 50 grams boiled green peas
- Add 20 grams boiled carrot
Cook for another 2 to 3 minutes and mix well.
Mash everything using a potato masher - mix everything well.
- Now add 2 full (grated) boiled eggs
- Add 3 tbsp milk
Mix and mash once again.
Cook for 5 minutes.
- Add handful of mozzarella and cheddar cheese
- Add the boiled maggi
- Add 2 tbsp fresh cream
Stir well to mix everything properly.
- Now break two (2) eggs on this mixed curry
Do not stir, just switch off your flame.
Close the pan with the lid.
Let it vapor cook or steam cook for 5 to 7 minutes or until the egg poach is ready.
Take it out in a plate, be careful not to break the egg poach, making sure the sunny side up is intact.
Sprinkle little parsley or fresh coriander on top.
MAGGI ANDA GHOTALA is ready.
You can have it as it is or accompany it with toasted bread or buns.
