Pie or Pizza or Pizza Pie. A form of pizza stuffed with lot of cheese that looks like a Pie, is what Chicago people love to eat. Known by its name Deep Dish Pizza, it is cooked in a deep pizza pan where the inside of the pizza is stuffed with mozzarella cheese and you will find Parmesan cheese below as well as on top of the crust. the name is the game while making this pizza.
In 1943, Pizzeria Uno invented Deep Dish Pizza which had thin layer but deep crust, stuffed and filled with mozzarella cheese and the top layer had a rather raw tomato sauce and toppings of various kinds. As days, months and years passed by this recipe was further developed by others in many ways and today New York has it's style of deep dish pizza too, however Chicago style is the most famous and unique among deep dish pizza, and why not it was invented there.
Today I am going to share with you a recipe of how to make deep dish pizza - Chicago style right from the kitchen of your home. You can use an oven to bake this or can even bake it without oven. (See my other pizza recipes to find out how to make pizza without oven, links at the bottom). Let's Begin.....
Steps & Ingredients:
In a mixing bowl take:
- 1/2 cup or 125 gram Maida (All purpose flour)1 tbsp sugar
- 1 tbsp salt or as per taste
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 2 tsp oil
- Curd (Dahi) - As per kneading requirement [Alternative: Warm Water & Yeast]
Use Dahi or curd to knead the dough, knead it well to make it soft.
Divide dough into two (2) parts of 1:2 proportion.
Cover them with a damp cloth and leave it for proving, 30 minutes minimum.
Take a deep pizza pan - minimum 2" deep.
Grease the base, corners and inside edges with butter, so that all corners are evenly wrapped in butter.
Now sprinkle some parmesan cheese powder.
Roll the pizza pan so that the cheese coats the butter.
Now using your hand or with help of a rolling pin flatten your pizza dough.
Make a thin disc. The size of your flatten dough should be more than the size of the pizza pan.
Place the flatten dough inside the pizza pan, the base of the pan gets covered instantly.
Since the size of the dough was more, use that to cover all the corners and edges of the pan too.
Leave any excess hanging outside the pan.
Fill the dough or crust with grated / diced mozzarella cheese. (You would require 1/2 kg to 1 kg).
Once cheese is filled, roll the small portion of the dough to make a disc, this time make it exactly the size of the pan.
Cover the cheese filling with this disc.
Seal the disc with the extra hanging dough, use water as glue.
Make some holes in the pizza. else the pizza will puff up.
Pre-Heat your oven at 200° C to 210° C or the highest temperature available in your oven, for a minimum of 15 to 20 minutes.
While the oven is pre-heating.
Let us get the pizza ready for baking.
- Add pizza sauce on top of your pizza.
- Add toppings of your choice like paprika, pepperoni, olives, jalapenos, corn, mushrooms, capsicum (red / yellow / green), tomato, onion, paneer (cottage cheese).
- Add handful of mozzarella cheese.
- Sprinkle handful of parmesan cheese powder.
Put the pizza inside the oven.
Bake it for 15 minutes.

Deep Dish Pizza - Chicago Style is ready.
This pizza is specifically for cheese lovers as the contents of cheese in this pizza is much higher than other pizzas we eat.
