I love Pie and according to me Pie is a dish that can make your day, if the pie is perfectly baked and has the perfect mix of taste (I mean the salt and sugar along with the fruit) then you would be just refreshed once you have a pie.
Though Pie is most famous in America and all 50 states of America have their own version of pie but did you know that Apple Pie topped with cheddar cheese is a state dish.
Yes, Vermont is the place where Apple Pie is a state dish and is served with a big chunk of cheddar cheese on top of the slice of the pie, another popular way of serving a pie is with a scoop of ice cream on top of it.
Well, not wasting much of time, let us see how to make An Apple Pie, so Let's Begin....
Ingredients & Steps:
Making the Pie filling:
Heat up a pan
- Add 2 tbsp butter, let it melt
- Add 5 medium size apples (diced)
- Add 3" cinnamon stick (dalchini)
- Add 60g castor sugar (powdered sugar)
- Add 60g brown sugar (bhuri sugar)
Stir properly.
Make sure the apples are coated evenly with sugar.
- Cook for 5 to 7 minutes.
Apples will start releasing juice.
Separate the juice in another bowl.
- Add 1 tbsp corn flour / corn starch powder
Stir properly.
Once you see the little bit remaining juices have been soaked up by corn flour, switch off your gas flame.
- Add 2 to 3 drops of lemon (for the tangy taste)
Mix and keep it aside.
On the other hand.
Boil the apple juice that we took out.
Once the juice turn into a caramel.
- Add it to the apples.
Stir it properly and mix everything.
Let everything cool down, leave it aside.
While the apple is cooling down, let us make the crust for the apple pie.
Making the Crust:
- Take 350g of all purpose flour (maida)
- Add 2 tbsp of powdered sugar
Mix it well.
Put it in a kneading tray or your working station.
- Add 250g of salted butter (butter needs to be super chilled and cut in cubes)
Start kneading and mixing the butter with the flour (maida).
Once the butter has completely and properly mixed with the flour (maida), the flour (maida) will resemble bread crumbs.
- Now add chilled water
Knead again, whilst adding water little by little and bind the flour (maida) into a dough.
Divide the dough into two (2) equal parts.
Shape both the dough as thick disc (just press the dough balls with your hands to shape it).
Cover both the dough disc separately and keep it in the refrigerator for a minimum of 30 minutes.
Dust your rolling station or work bench with some flour (maida).
Keep the disc on it, out of the fridge and with the help of a rolling pin flatten it to the size of your baking tin or pie dish.
Put the flatten dough on your pie dish.
Press it to towards the bottom and to the sides.
Trim off any extra dough sticking outside the pie tin.
Take a fork and prick the dough all over for docking, which prevents the dough from puffing up while baking.
Bake it in a pre-heated oven at 180° C for 5 to 7 minutes.
Making the lattes:
Lattes are required to cover the top of the pie.
You can cover it in any design, the most used and common design is the criss cross design.
Take the other half of the dough to make the lattes.
Roll it to a disc shape, big enough to cut and take out thick strips from it.
Once dough is baked, fill it with the cooked apple (remove the cinnamon stick).
Make sure that too much of juice or liquid is not transferred with the apples, else the crust base will get soggy.
Cover the top with the lattes or strips in a criss cross manner.
Bake the apple pie at 180° C for 35 to 40 minutes or until the apple starts bubbling.
Apple Pie - American Style is ready to be served.
Serve it with a scoop of vanilla ice cream and some maple syrup on top.
