Let me not say much about this recipe that I would be sharing today. It is made with the most staple food used all over the world and from young to old everyone has it. Yes, am talking about potatoes.
It is one food item that is prepared of it's own, alone it gives so many different taste and their would be one thousand one recipes with potatoes, when mixed with another item then it enhances the taste of that recipe being cooked.
So without much ado. Let's Begin...
Ingredients and Steps:
- Take 4 - 5 small size potatoes
- Take 5 - 6 small to medium size onions
- Take 2 - 3 medium size tomatoes
- Take 3 - 5 green chillies
- Take 8 - 10 cloves of garlic
- Take 1" - 2" ginger
Peel the potato skin
Chop onions, tomatoes, chilli, garlic and ginger.
Take a small mixing bowl (katori) and put all spices (masala) together.
- 1/2 tsp kashmiri red chilli powder
- 2 tsp degi red chilli powder
- 1/2 tsp turmeric (haldi) powder
- 1/2 tsp salt
- 1/2 tsp kasturi methi (dried fenugreek)
- 1/2 tsp garam masala
Other ingredients that you need:
- 4 - 5 kaju (cashew nuts)
- 2 tsp magaj (dried watermelon seeds)
- 1/2 tsp jeera (cumin seeds)
- 1 small cinnamon stick (dalchini)
- 2 - 3 cloves (laung)
- 1 - 2 small green cardamon (chota elaichi)
- 2 bay leafs (tej patta)
Heat up a frying deep frying pan.
- Add 3 - 4 tbsp oil
- Add potatoes (do not cut potatoes - just peel them)
Fry the potatoes.
Once potatoes turns slightly golden brown, take them out and keep them aside.
In the same frying pan continue frying other items as mentioned below.
- Fry garlic and ginger
Once garlic turns brown
- Add onions
- Add green chillies
Fry until onion turns golden brown
- Add tomatoes
- Add kaju (cashew nuts)
- Add magaj (dried watermelon seeds)
Fry for 3 - 5 minutes.
Let them cool down, once cooled put them in a mixer grinder.
- Add little water
Now heat up a cooker in medium flame.
- Add 2 - 3 tbsp sunflower oil (refined oil)
- Add bay leaf
- Add small green cardamon (chota elaichi)
- Add cloves (laung)
- Add cinnamon stick (dalchini)
- Add cumin seeds (jeera)
Roast for 2 minutes.
- Add the spices (masala)
Mix well.
- Add 1 cup water.
Cook for 2 - 3 minutes.
- Add the onion & tomato paste - we made
Cook for another 3 - 4 minutes.
- Add the fried potatoes
- Add 1 - 2 cup water (as per gravy consistency you require)
Cook for 2 minutes more.
Close the lid of the cooker.
- Add little water (if required for pressure cooking)
Pressure cook until 3 - 5 whistle blows.
Delicious Dum Aloo is ready to be served.
Garnish with some fresh chopped coriander leaf (dhania patta).
