A very popular dish from the Gujarati cuisine is the DHOKLA.
Steamed square or rectangle, sometimes triangle pieces made out of chickpea flour or gram flour, is an anytime favorite of Gujaratis.
Not only the gujaratis love this fluffy steamed dhokla, but people all around the country love to have it. Dhokla is so popular that it has become a quick bite even in the USA, UK and other countries.
Dhokla is served with a green chutney made of coriander, mint and chillies which is salty and spicy and also with a brown chutney (sauce) made of tamarind which is sweet in taste.
Today let us make this quick gujarati recipe and enjoy it as an evening snack. Let's Begin...
Ingredients:
For making Dhokla -
- 2 Cup besan (chickpea flour / gram flour)
- 1 tbsp salt
- 1/2 tsp lemon juice
- 1 tbsp sugar
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1/4 tsp baking soda
- 1 tsp ENO
For Tempering -
- 1 tbsp oil
- 2 tbsp sugar
- 1 tbsp mustard seeds (rai)
- 8 - 10 pcs curry leaves
- 2 - 3 pcs green chilli (slit)
Steps:
Take a mixing bowl
- Add Besan (gram flour)
- Add Sugar
- Add Turmeric powder
- Add Chilli powder
- Add Lemon juice
- Add Salt
- Add Water (as required)
Make a thick batter.
- Add 2 tbsp hot oil
Whisk well for 2 minutes.
- Add Baking Soda
- Add ENO
Mix well.
Grease a round baking tray. (Those used for baking cakes), with oil.
Transfer the batter in the round baking tray. (Alternate: You can use idli molds also)
Heat up a pressure cooker.
Keep a stand inside the cooker. (Stand will act as a separator).
- Fill 250 ml water
When water starts boiling.
Put the baking tray on the stand inside the pressure cooker.
Close the lid. Do not put the whistle.
- Cook in medium flame for 10 - 12 minutes.
Take it out.
Cut the Dhokla into square pieces.
Now heat up a pan for tempering.
- Add oil
- Add mustard seeds
- Add curry leaves
- Add green chillies
- Add sugar
- Add 1/2 cup water
Pour this on top of Dhokla.
Dhokla is ready.
Garnish with chopped coriander leafs and grated coconut.
Serve dhokla with green and brown chutney (sauce)
