Shrikhand
or Shreekhand is a Gujarati specialty, sweet curd desert, that is a
must serve after a meal. A little tangy and a little sweet, srikhand is a
all time favorite for gujaratis. Srikhand comes in lot of flavors.
Let us make Srikhand in our home and see how easy it is to cook this recipe / food. Let's Begin...
Ingredients and Steps:
Heat up a pan.
- Add 1 liter buffalo milk or full fat milk
Let it come to a boil.
Keep stirring while it comes to a boil.
Take it out in a bowl.
Let it cool down under room temperature.
Once it cools down enough that you can touch it with your fingers.
- Add 1 tbsp curd
Mix well, close the lid.
- Keep it aside for 4 - 5 hours in under room temperature.
- Then refrigerate it for 2 hours.
The milk will become curd. A thick curd, is what we want.
Now let us follow the hang curd process.
Take a bowl.
Keep a cheese cloth inside.
Fill it with the curd.
Wrap the curd with cheese cloth.
Tie a loose knot at the end.
Close it with lid.
Keep it inside your refrigerator for over night.
Next day, take another bowl.
Place a strainer on top.
- Stain the curd.
- Stain 1 - 2 cup powdered sugar along.
Do it step wise.
Stain little curd.
Then stain little powdered sugar.
Repeat the steps until you complete staining both curd and sugar.
Now mix properly.
You will see a smooth thick batter.
- Add 1/2 tsp elaichi powder (cardamon)
- Add 1/4 cup pista (chopped)
- Add 1 tsp saffron (soaked in 2 tbsp milk for 1/2 hrs)
Mix well.
(Tip: 1 liter milk + 200 grams sugar = 750 grams of Srikhand).
Srikhand is ready.
Garnish with kesar and pista.
Serve it chilled.
