Rasmalai - Sweet Recipe

With the year 2020 coming to an end, though it showed us lot of things, rather lot of bizarre things, yet let us celebrate this new year with some sweets and pray to God that the new year 2021 brings good luck and good news all over the world for everyone. 

Keeping this in mind I thought of sharing my rasmalai recipe with all of you, so that you all my friends can also make this new year sweet with this sweet recipe. It is easy to make, all you need is chena or paneer or as known as cottage cheese, dipped in some sweet saffron milk and garnished with dry fruits.

Ingredients and Steps: 

  1. Take 2 ltr milk.
  2. Heat up the milk until first boil.
  3. As soon as first boil comes, switch off gas flame and let the milk cool down for 5 minutes.
  4. Add 3 - 4 tbsp vinegar, mixed with 1 cup of water.
  5. As soon as you add this mixer and stir for a minute, the milk will cuddle and become cheese (chena).
  6. Stain the cheese in a cheese cloth.
  7. Wash it with cold water.
  8. Squeeze firmly to take out any water from the cheese (chena).
  9. Add 1/2 tbsp maida (all purpose flour)
  10. Knead and mash the maida and chena together for 5 - 7 minutes.
  11. A dough will form.
  12. Make small balls out of the dough.
  13. Keep one ball at a time, between your palms and press it softly to make it little flat.
  14. Keep all this flat cheese (chena) balls aside.

Heat up a pan.

  • Add 4 cup water
  • Add 1 cup sugar

When the sugar completely dissolves in sugar and water starts boiling.

  • Add those flat cheese balls in it

Cover with a lid and steam cook for 20 minutes.
After 20 minutes turn off gas.
Let the flat cheese balls cool down in the sugar water mixture, by keeping the lids closed and letting it cool down completely.


On another pan.
 
  • Heat up 2 ltr milk.
Keep stirring continuously until 2 ltr milk reduces to 1 ltr.
 
  • Add 100 g to 150 g sugar
  • Add saffron milk (2 - 3 g saffron soaked in 3 - 4 tbsp milk)
 
Cook for 5 - 7 minutes.
Switch off the gas.
 
  • Add the soaked flat cheese (chena) balls in the milk. 

Let the food cool down in room temperature.
Garnish with lot of pistachio (pista) and almonds (badam).
Refrigerate it for 2 hours before serving.
Serve them chilled.
