If you are a South Indian or if you hail from countries like Malaysia then you surely know what are APPE or UNNI APPAM or ULUNTHU VADAI. Traditionally, Unni Appam is a sweet dish made in the southern part of India. Other versions are the salty savory made out of the same ingredient less the sweet and coconut, wherein added to it is salt and some onions, curry leaves and green chillies. In Malaysia you will find lot of street food vendors selling the salty version of this south Indian recipe mixed with egg.
Basically unni which means small in Malayalam and appam means name of a food in Malayalam which are nothing but rice pancakes. Thus small rice pancakes made out of rice flour, mixed with sugar or jaggery and coconut are deep fried in a special pan known as paniyarakkal which gives them a round shape, are known as unni appam.
Today we will make the salty version of this lip smacking, mouth watering rice appe with a little twist. Let's Begin......
- Ingredients and Steps:
- Take a mixing bowl.
- Add 1 cup rice flour
- Add 1/2 cup fresh curd
- Add 1 onion (fine chopped)
- Add 1 - 2 green chillies (fine chopped)
- Add 1/2" ginger
- Add 2 tbsp sooji (semolina)
- Add 1 tbsp oats (optional)
- Add little water
Mix and make a semi thick batter.
Let it rest for 5 - 10 minutes while covered.
- Add salt as per taste
- Add 1/4 tsp baking soda
- Add 2 tbsp coriander leafs (fine chopped)
Mix well.
Heat up an appe pan (paniyarakkal), with very little oil (1 - 3 drops) in each hole.
Grease each chamber or hole or pockets and let the oil heat in medium flame.
Put little, semi thick appe batter in each chamber or pocket.
Once all the pockets are filled with the appe batter, cover the paniyarakkal with the lid.
Cook for 3 - 4 minutes over medium flame, then turn the appe with the help of a stick or spoon once golden, for the other side to cook.
Add few drops of oil after turning the appe.
Cook for another 2 - 3 minutes, this time without the lid.
Take the appe(s) out in a bowl.
- Add 2 tbsp podi masala, also known as gun powder (do it immediately after you take out the appe)
Toss and coat the appe with podi masala (gun powder).
Again heat up a pan (The TWIST)
- Add 3 tbsp ghee (clarified butter)
- Add the podi masala coated appe
Fry the appe for 2 - 3 minutes on medium flame.
- Add little coriander leaves and curry leaves (fine chopped)
Stir properly.
Rice Appe - Unni Appam recipe with a twist is ready.
Serve it with coconut chutney, ketchup and gun powder.
