Potato is a versatile vegetable that can be had alone or mixed with any other vegetable gives it another taste all together.
Puffed fried breads or Puri / Poori is an Indian bread version where atta (wheat flour) is used to make the bread which is then fried in hot oil, to perfection.
Today I bring a combined dish, rather a meal from the marwari cuisine. It's easy to cook and very tasty to eat. Let us see the recipe on how to make it. Let's Begin.........
Ingredients & Steps:
Let us prepare the Puri / Poori:
Take a mixing bowl.
- Add 1 cup atta (wheat flour)
- Add 2 tbsp sooji (semolina)
- Add 1 pinch salt
- Add 1 tbsp oil
First mix them properly, then
- Add water (slowly, little by little, as required)
Knead to form a firm dough, not too hard neither too soft.
- Add 1 tsp oil to the dough
Spread all over and knead once more.
Cover the bowl in which the dough is made, with a lid and let it rest for 15 - 20 minutes.
Then, make small or medium size balls, flatten the balls with help of rolling pin to form discs.
Fry them in hot oil, under medium flame.
Take out the puri / poori once they puff up and turns slightly golden from both sides.
Puri / Poori or Puffed Fried Breads are ready.
Let us prepare the Curry:
Heat up a kadai (pan)
- Add 2 tbsp desi ghee (clarified butter, alternate: cooking oil)
- Add 1/4 tsp asafoetida (hing)
- Add 1/2 tsp coriander seeds (dhania)
- Add 1/2 tsp fennel seeds (sauf - grounded)
- Add 1 tsp cumin seeds (jeera)
Mix properly and stir for 1 minute.
- Add 2 bay leafs
- Add 2 whole dry red chillies
- Add 1/2" cinnamon stick (dalchini)
- Add 1 green chilli (chopped)
- Add 1" ginger (grated)
Again, mix well and stir properly for 1 - 2 minutes.
- Add 1 big size onion (chopped)
Stir and cook until onion turns translucent.
- Add 2 tomatoes (small diced or chopped)
- Add 1 tsp salt (or as per taste)
- Add 1/2 tsp turmeric powder
- Add 1 tsp red chilli powder
- Add 1 tsp coriander powder (dhania)
- Add 2 tbsp water
Once the oil starts separating.
- Add 1 cup water
Mix it properly and turn the flame high.
- Add 1 potato (boiled, peeled and cut in cubes)
- Add 1 potato (boiled, peeled, hand crushed or mashed lightly)
Stir and mix well and cook until it starts boiling.
- Add 1/2 tsp garam masala
- Add 1/2 tsp amchur powder (dry mango powder)
- Add 1 tbsp kasturi methi (dry fenugreek leafs - crushed by hand)
Mix well and stir properly.
Close the lid and cook for 5 - 7 minutes.
Once cooking is done for 5 - 7 minutes.
Open the lid and sprinkle some fine chopped fresh coriander leafs.
Stir once and switch off the gas flame.
Curry is also ready.
