I myself am a Pizza lover and if you are following my blog, then you will find I keep on adding pizza recipes from time to time. We all know that pizza is a savory dish, which originated from Italy, and the best part which I like in them is the stretchy melted cheese.
Being a vegetarian, am a die hard fan of paneer, so today am sharing a recipe of dominos style paneer makhni pizza with everyone. Hope my recipe keeps up to the taste. Let's Begin........
Serving Size: 2 X 9" Pizza.
Ingredients and Steps:
Take a big mixing bowl.
- Add 1/2 cup hot water
- Add 2 tsp sugar
Stir it for 2 - 5 minutes, so that the sugar dissolves, and once the water becomes like warm.
- Add 1 tsp instant dry yeast
Stir it once properly and let it sit for 3 - 4 minutes.
One yeast starts floating.
- Add 250g / 2 cups of maida (refined flour)
- Add 2 tbsp milk powder
- Add 1/2 tsp garlic powder
- Add 1 tsp salt
Mix and form a dough.
Knead it in your platform for 7 - 9 minutes, to form a sticky soft dough, which anyways does not sticks to your hands. You can add little water while kneading, if required.
Once kneading is done.
- Add 1 tbsp butter (melted)
Knead again, and if the dough feels stiff then add little water to make it soft. Make sure your dough is sticky and stretchy.
Take a container / bowl.
- Add 1 tbsp cooking oil
- Grease the container with oil.
- Put the dough inside the container / bowl.
- Let the dough also get greased by the oil.
- Cover and close the lid tightly.
- Keep it to rest, inside refrigerator, until the dough doubles in size or proved. (Min 6 hrs to 7 hrs or 24 hrs).
Sprinkle some maida n your kneading station.
Take out the dough, and divide it into two (2) same size dough.
Knead and smoothen it, make balls.
- Cover it with a cloth and keep it to rest for another 20 - 30 minutes. (2nd stage of proving).
While the dough is resting, let us make the paneer makhni gravy.
Heat up a pan (kadai)
- Add 1 tbsp oil
- Add 2 tbsp butter
Let the butter melt.
- Add 1 tbsp kashmiri red chilli powder
- Add 1 tsp coriander powder (dhania)
- Add 1 tsp salt
- Add 1/2 tsp garam masala
- Add 1 tsp maida
- Add 1 tsp kasturi methi
- Add 1 tbsp ginger garlic paste
Stir and roast in low heat, for about 1 - 2 minutes, until the spices starts leaving oil.
- Add 200 ml tomato puree (ready made)
Cook for 5 - 6 minutes in medium high flame, cover the lid while cooking.
Once gravy starts moving with a stir, thickens and starts leaving the pan.
- Add 1 cup water
- Add 1 tsp sugar
Mix it properly.
Take out 1/2 cup gravy in a bowl to temper the cream.
Cook the rest of the gravy until it starts boiling.
- Add 1/3 cup of cream to the 1/2 cup gravy.
Mix the cream in the bowl and add it to your cooking pan, where rest of the gravy is boiling.
Give it a good stir and cook it for 2 - 4 minutes in high heat, then let the gravy cool down.
While the gravy is cooling down, let us prepare our paneer (cottage cheese).
Take another pan (kadai).
- Add 1/2 tsp oil
Once oil gets warm, turn off your flame.
- Add 1 pinch haldi (turmeric powder)
- Add 1 pinch garam masala
- Add 1 pinch red chilli powder
- Add 1/2 tsp kasturi methi
- Add 1/2 tsp salt
- Add 1/4 tsp ginger garlic paste
Turn your flames on
- Add 100 g paneer (cubes)
Stir it and cook for 1 - 3 minutes.
So we are ready, to assemble and bake the pizza.
Pre-heat your oven or OTG at 250 ०C for 10 - 15 minutes, keeping it in bake mode which means bottom rods of the oven will be on and fans will be on only.
- Throw 2 tbsp maize flour or semolina (suji) on your kneading station.
- Keep the pizza dough on it.
- Stretch the dough, spherically or round in shape, keeping the edges thicker.
- Make it round - 9" in circumference.
- Place it on a pizza screen.
- Put some makhni gravy on it.
- Spread the makhni gravy evenly all over the dough.
- Add mozzarella cheese (quantity as you like)
- Add cheddar cheese (quantity as you like)
- Add 10 - 12 pieces of paneer cubes (approx 50 g)
- Add capsicum (julienne cut)
- Apply garlic butter (melted) with a help of a brush on the side of the dough.
- Bake the pizza for 10 - 20 minutes.
- Keep a check as time may vary, a little less or a little more.
Once you see pizza is baked properly, take it out and sprinkle some oregano and chilli flakes on top, ready to enjoy!!!
Paneer Makhni Pizza - Dominos Style is ready.
