Vermicelli & Scrambled Eggs - Breakfast Recipe

Big problem for the ladies in our home, specially those who are working have even bigger problem to solve each day and now with unlock mode, offices have started as well. The problem is what to quickly make for breakfast which everybody can have. Something which is tasty and can be cooked quickly.



I have a solution for them today, in the form of a recipe which contains Vermicelli (Sewai / Semiya) and Eggs (Anda). Well, my vegetarian friends, do not get upset, just replace the eggs with paneer (cottage cheese).

Vermicelli also known as sewai in hindi, is made from either rice (chawal) or semolina (sooji / suji) and looks like straw or thin spaghetti shaped strings / noodles broken into small 1" to 2" size pieces. They are found in white color (plain) or in brown color (roasted). So let us make a quick breakfast with vermicelli and scrambled eggs. Let's Begin.....

Ingredients & Steps:

  • In a big mixing bowl
  • Break 5 eggs
  • Add 2 finely chopped onion
  • Add 2 finely chopped tomatoes
  • Add 2 finely chopped green chilly
  • Add 1 tsp turmeric powder
  • Add 1 tsp red chilly powder
  • Add 1 tsp chaat masala
  • Add 1 tsp chicken masala
  • Add salt to taste
Blend it well with a help of a spoon or fork or egg beater or whisker.
Heat up a pan (kadai).
  • Add 50 grams of butter (alternatively you can use oil)
  • Add 1 tbsp mustard oil
Pour the egg mixture from the bowl.
  • Cook for 2 to 3 minutes

Stir properly using a spatula so that eggs are broken into small pieces.
  • Add 1 cup boiled milk
Close the lid and let it cook for another minute or so.
While it is being cooked, on the other hand.
  • Heat up a frying pan
  • Add 1 tsp mustard seeds (rai)
  • Add 200 grams of plain white vermicelli (sewai)
  • Add 1 clove of garlic (crushed)
Dy roast it slightly by tossing for 4 to 5 times.

  • Add this vermicelli in the main cooking pan (kadai)
  • Add 125 ml water (if required, skip if mixture is already liquid because of milk)
  • Add salt to taste (remember we had added salt in the eggs)
  • Add few curry leaves
Stir and mix everything well.
Close the lid and cook for 4 to 5 minutes on low to medium flame.

Vermicelli with scrambled eggs is ready to be served in the breakfast. Garnish with some coriander sprigs and serve it with tomato ketchup. Enjoy your day with this nice breakfast and don't forget to comment and subscribe.
