Vindaloo - Goa Recipe with a Twist

Vindaloo is a very famous mix of spices (paste form) which is used to make lot of dishes. Vindaloo came into existence in India because of the Portuguese. Vin means wine and a-lo means garlic in Portuguese. It was the Portuguese who made pork meat using wine and garlic and since they landed in Goa (Union Territory of India), thus the Goans took this tasty recipe from them and made it their own.

Today Vindaloo is used not only to make pork dish, which is the most famous classic dish of Goa, known as Pork Vindaloo, but lot of other meat and veggies are added or cooked with vindaloo nowadays. It is said and believed that if you know the right ratio of mixing different spices, then you can make most of the foods found in a Goan cuisine.

For all my vegetarian friends and subscribers, today I will show you and share with you a recipe on how to make a vegetarian vindaloo dish. I am replacing the meat (pork or chicken) with soya chunks which we commonly call nutrela. So let us make Soya Vindaloo - Goan Dish from the cuisine of Goa. Let's Begin....

Ingredients & Steps:
    vindaloo vinegar
  • 6 - 7 pcs dry red chilli (lal mirch)
  • 3 - 4 cloves of garlic (lehsun)
  • 2" - 3" ginger (adrak)
  • 2 - 3 pcs small green cardamon (chota elaichi)
  • 2 - 4 pcs cloves (laung)
  • 4 - 6 globules of black pepper (gota gol mirch)
  • 1 tsp cumin seed (jeera)
  • 1/2" cinnamon stick (dalchini)
  • 125ml - 150ml goan toody vinegar (sirka) [Alternative: white wine vinegar or malt vinegar]
Take a small bowl, put all the spices, fill the bowl with vinegar.
Let the spices soak in the vinegar for overnight. (For quick make soak minimum 2 - 3 hours).
Take a mixer grinder.
  • Add these soaked spices along with vinegar
Grind well to make a fine paste out of it.

Vindaloo paste is ready.








 
 
 
 
Take a mixing bowl.
  • Put 250g to 300g of soya chunks (soaked in water for 4 to 5 hrs)

  • Marinate the soya chunks with vindaloo paste
  • Put 1 tsp sugar
Mix it properly.
Leave it aside to rest.
Heat up a pan.
  • Add 2 tbsp oil (sunflower or refine oil)
  • Add 2 tsp mustard seed (rai)
  • Add 2 diced onion
  • Add 1 diced carrot
  • Add 2 diced tomato

Saute the vegetables for 1 to 2 minutes.
  • Add marinated vindaloo soya chunks
Cook for 5 to 7 minutes.
  • Add 100ml boiled milk
  • Add 150ml water
Cook it until boil.


Vindaloo Recipe 
 
Soya Vindaloo is ready to be served.

Garnish with fresh coriander leafs and sprinkle some cream on top. you can have it with rice or any Indian bread of your choice, however rice is the best combination to eat with vindaloo recipes.
