a state in India, is a land of culture and foods, I have been exploring
the gujarati cuisine for a long time and the more I explore, the more I
fall in love with their foods. Gujarati Kadhi is one of them.
Yet
another gujarati dish, made with love and pride just by mixing some
curd with gram flour (besan), continue reading to know how exactly
gujaratis make their kadhi, a kind of Indian soup made with curd and is
had with Roti (Indian Bread) or Rice.
Due
to the extensive use of jaggery in the gujarati cuisine, most gujarati
recipes are a bit on the sweeter side. Ah!!! we can say Gujaratis are
sweet people.

Let us quickly make gujarati kadhi in our home and enjoy the recipe. Let's Begin...
Ingredients:
- 4 cup dahi (curd / yogurt)
- 2 cup water
- 3 tbsp besan (gram flour)
- 7 - 9 curry leafs
- 1 dry red chilli
- 1" dalchini (cinnamon)
- 1" ginger + 2 green chillies (make a paste)
- 3 cloves
- 2 tbsp sugar
- 4 tbsp jaggery (gur)
- 1 tsp methi (fenugreek seeds)
- 1 tsp jeera (cumin seeds)
- 1 tbsp ghee (clarified butter)
- Salt as per taste
- Chopped coriander for garnishing
Steps for cooking:
In a bowl or big pan.
- Add dahi
- Add water
Mix and make a liquid.
- Add besan (gram flour)
- Add ginger and chilli paste
Mix well using a blender.
Let this mixture boil in medium flame.
Keep stirring so that mixture does not sticks to the pan.
Tempering:
In another pan.
- Add 2 tbsp ghee (clarified butter)
- Add methi (fenugreek seeds)
- Add cloves
- Add dry red chilli
- Add jeera (cumin seeds)
- Add dalchini (cinnamon)
Roast until methi becomes a little brown.
- Add curry leaves
Mix well.
Pour this ingredients to the main pan, which has the curd and besan mixture.
Let the mixture keep boiling, so that it becomes little thick.
- Add salt to taste
- Add sugar
- Add jaggery
Mix well.
Cook until sugar and jaggery melts completely.
Garnish with some chopped coriander leafs.
Gujarati Kadhi is ready.
Can
be had with rice or roti of your choice, best to eat with poori (fried
Indian bread) or chapati (roasted Indian bread) brushed with ghee
(clarified butter).
