Pav Bhaji is another dish famous in the state of Maharashtra, much known in the city of Mumbai, thus many refer to Pav Bhaji of Mumbai as the most authentic one. You will however find Pav Bhaji all over India as well as abroad. It is found both in restaurants / hotels, as well as in street food.

Ingredients and Steps:
Let us make the Bhaji First.
Take a cooker.
Turn your flame to medium
- Add 3 potatoes (peeled, roughly cut)
- Add 1 carrot (peeled, roughly cut)
- Add 3 - 4 tomatoes (roughly cut)
- Add 1 beetroot (peeled, roughly chopped)
- Add 1 cup green peas (fresh / frozen)
- Add 1/2 cup water
- Add 1 tsp salt
Mix it once and close the lid of the cooker.
Turn flame to medium high.
Cook until 2 whistle blows.
Let all pressure get released by itself.
Open the cooker once cooled.
Using a potato masher, mash the ingredients and keep it aside, to be used later.
On the other hand.
Take a kadai / tawa (thick frying pan)
Heat up the kadai on medium flame.
- Add 2 tbsp butter
- Add 1 tsp oil
- Add 1 tsp jeera (cumin seed)
- Add 2 onion (big size - fine chopped)
Saute the onions until they are translucent.
- Add 1 capsicum (fine chopped)
- Add 2 green chillies (chopped)
- Add 1 tbsp ginger garlic paste
Saute on medium flame for 2 to 3 minutes.
Turn flames to low.
- Add 1 tbsp kashmiri red chilli powder
- Add 2 tbsp pav bhaji masala (fresh or from market)
Mix well and cook for 2 - 5 minutes.
- Add 2 - 3 tbsp water
Cook until oil separates.
- Add mashed vegetables
Mix well, mash and cook in low flame for another 5 - 10 minutes.
If vegetable thickens.
- Add water (as required to adjust thickness)
- Add salt as per taste
- Add 1 tsp kasturi methi
- Add 1/2 tsp lemon juice
Mix well and there you have your Bhaji is ready. Take it out on a serving bowl, garnish with butter and chopped coriander leafs.
Now let us make the Pav.
- Add 2 tbsp butter
- Add 1 tsp kashmiri red chilli powder
- Add 2 tsp bhaji
- Add 4 - 5 pcs of coriander leafs
Mix well over low flame.
Slit your buns from the middle, open it and place them face down on the tawa.
Cook for 1 minute.
Brush slight butter on the other side (the outer part)
Flip over and cook the other side for 1/2 minute and your Buns would be ready.
Pav Bhaji is ready.
Serve it with some lemon and some chopped onions. Let us enjoy this cool weather with this hot and freshly made pav bhaji.
